Bake N Bitez does two things and does them well: sushi bakes and burnt cheesecakes. Their cheesecake is baked in the Basque style, hot and fast, so the top caramelises to a deep, almost-bitter brown while the inside stays soft, creamy and slightly custardy in the middle.
